Smoothie Recipe of the Month

Lately I’ve been trying out different fruits or vegetables in my smoothies and recently I stumbled across bok choy in the grocery store. I’ve had it before in different dishes from restaurants or fast food places but never knew much about it, so I decided to give it a try. I cooked half with onion and garlic and then I chopped the leaves off the stems of the remaining bok choy and threw a cup of it into a smoothie. I was pleasantly surprised that it didn’t taste awful, and it gave the smoothie an even sweeter kick than normal. Normally I use spinach as a leafy addition to my smoothies so it was nice to try something a little different. I looked up the nutritional facts for bok choy and it turns out that it’s high in Vitamin C and Vitamin A, as well as low in calories and carbohydrates, which makes it a perfect addition to my smoothies. I definitely suggest trying a little bit out in your smoothies, for a change from spinach or kale. The recipe I’ve been using is:

  • 1 cup of bok choy ( leaves only )
  • 2/3 cup of frozen mango
  • 1/2 cup of frozen strawberries
  • Half a banana
  • 1 cup of water
  • Scoop of vanilla protein powder ( optional )

To add a little bit of a kick to it you can sprinkle some cinnamon on top, but it’s great without it as well. Hopefully you guys enjoy this smoothie!
